Nantucket Island Single Malt Whisky
Dean Long, co-founder and original distiller at Triple Eight Distillery, started producing The Notch in the year 2000. Dean, having previously run the still producing fortified wine for Nantucket Vineyard, decided he wanted to craft a world class whisky. Dean reached out to George McClements, former production manager at Islay’s Bowmore Distillery, to advise on technique for batch distillation. 8 years later Triple Eight Distillery released The Notch Single Malt Whisky, the United States first and only island malt whisky.
Randy Hudson took over as lead distiller at the end of 2008. He came into this position after 14 years as head brewer and co-founder of Cisco Brewers. With a warehouse full of Nantucket single malt whiskey by 2011, Triple Eight Distillery contacted master blender, John Ramsey. John, with over 45 years of experience in the Scottish whiskey industry, assisted in cask selection for the release of the Notch 10 and 12 year old.
Notch Single Malt Whisky is crafted from Maris Otter, an heirloom variety barley. The grain is milled and mashed on property at Cisco Brewery. The mashing process creates wort which is then transferred to Triple Eight where it is fermented and batch distilled. Following distillation, the whisky is aged in oak barrels on island.
During this maturation process, Nantucket’s environment plays an important role. Being an island, we have a maritime climate (oceanic climate, marine climate). Nantucket is located in the North Atlantic. That means it gets influenced by polar air mass. However, Nantucket is also close to the Gulf stream, so it gets influenced by temperate and tropical air mass as well. Only a handful of places in the world have this type of specific climate.
Triple Eight Distillery takes advantage of its unique situation by using ventilated warehouses, allowing the island to mature our spirits in oak barrels (all barrels are at least 53 gallons in size). After aging, a portion of the whisky is sometimes double-barreled, or cask-finished, in former Sherry barrels, barrels that previously held cognac, sauternes or previously used wine barrels from Nantucket Vineyard. The real importance of this step is "marrying" the different barrels through vatting and re-barreling, allowing the their differing qualities to come together.
At this point, Nantucket water is added to the cask strength whisky to reach the desired bottling proof. The water a distillery uses is a very important part of making a world class spirit. Fortunately, Nantucket has a sole source aquifer, which is known for its pristine water quality.
We are currently experimenting with different types of mashbills, yeast and different distillation methods on our pot and column stills. Look for future releases to see what we’ve been up to on island.
